Shirini Keshmeshi | Persian Raisin Cookie
Shirini Keshmeshi is one of the oldest Persian pastries that are served in special occasions. These Persian cookies are very delicious and you would not want to stop eating them. They taste awesome and feel light when eating. Persian raisin cookies are made from dough and raisin as it is obvious by its name. These soft cookies are mostly served in Nowruz ceremony just like Shirini Morabayi, nun nerenji and kolompe.
These light and creamy color cookies are best served with tea. It would be much better if the drink is Persian tea. Nothing can be a better match for that!
Shirini Keshmeshi | Persian Raisin Cookie Recipe
Ingredients
- 290 g Flour (2 glasses)
- 100 g Raisins (half glass)
- 1 teasp Baking powder
- 2 Eggs
- ½ teasp Vanilla
- 150 g Butter
- 250 g Powdered sugar (1.5 glass)
Instructions
- In order to make this cookie, first discard the butter and egg from the fridge and let it become a bit warmer. When the butter is softer, put it in a bowl and add the powdered sugar to it. Then whisk the content with the electric whisk for 5 minutes to have a lighter creamy content. Then add the eggs with 1 minute interval and keep whisking.
- Then add vanilla and keep whisking. Whisk one more minute. Then wash the raisins and add them to the content.
- Mix the flour and the baking powder and swift it 2 times. Add it gradually to the bowl of the content and keep beating. Turn the oven on with 160 cg and preheat it for a while. Then pick a tray and grease it with oil or simply use the special paper. Place the dough like small circles on the tray and place the tray in the oven. Wait for10 minutes and that will be enough for them to bake. When the cookies border is brownish it is ok to discard the tray.
Completing tips
- If this is your first time trying cooking cookies, better place just 2 of them for trial in the oven and test the crunchiness and the softness of it.
- If you swift the powdered sugar and the flour, it will have a better result in cookie making.
- Remember to have a soft butter. It should have been warmed by the room temperature.
- The raisins must be washed and dried and then used.
