Kolompe | The Persian date pastry

Kolompeh is one of the most famous pastries that you can make at home. This recipe ensures a tasty Persian cookie originally from Kerman that Iranians prepare for Nowruz.

In the past native Kermanis used to make this sweet with date palms and homemade oil in fire wood flames! Nowadays it is basically produced in pastry shops and cooked in the oven. Still tasteful and welcomed by Kermanis and tourists.

The well-known pastry has various recipes and tastes such as walnut kolompe, sesame kolompe, pistachio kolompe and Loghme kolompe.

Because of its nutritious ingredients, it is a healthy and beneficial snack. So if you want a gift, or simply an afternoon treat to enjoy with a cuppa, Kolompe will definitely work for you. Remember not to eat much, as it is a rather heating food.

Almost all Persian traditional sweets like Baqlava and Komaj taste delicious, so does Kolompe. It is one of the best and most popular Kermani souvenir.
Kolompe is like cookie and the content is made of a mixture containing cardamom powder, dates and some other ingredients.

Ingredients
  

For the dough

  • 250 grams Pastry flour
  • 125 grams Solid oil (oil that contains saturated fatty acids) or pastry oil
  • 100 grams Yogurt
  • 1 egg
  • ½ tablespoon Baking powder
  • Brewed saffron as much as required

For the stuffing

  • 200 grams dates
  • ¼ unit Powdered walnuts
  • 1 teaspoon A mixture of cardamom, cinnamon, ginger, nutmeg powder all mixed

Instructions for dough

  • Add baking powder to the yogurt and stir. Then put aside for minutes until baking powder functions.
  • Add the brewed saffron and egg yolk to the yogurt and stir well.
  • Sift the pastry flour 3times to become completely smooth and soft. Then mix it with the oil to appear as breadcrumbs. Then add the yogurt mixture to it and Make a well in the center and beat in it with whisk until smooth.
  • Finally put the dough in a freezer bag (or packed in other ways) and leave it in a fridge for 1 to 2hours to become ready.

Instructions for stuffing / filling

  • Peel the dates then detach the flesh from the pits and put them in a bowl.
  • Add the mixed powder (cardamom, cinnamon, ginger, nutmeg) to the dates and crush them with the back of the spoon and smooth them properly.

Preparing kolompe

  • Prepare the cookies.
    First way; to prepare kolompe by its special frame:
    ·       Pick some of the dough and spread it on a surface. Put some filling in it and wrap it up with the dough. Make a ball shape.
    ·       Press the ball with the special kolompeh frame.
    Second way; to prepare kolompe without frames:
    ·       Roll the dough out on a floured surface to a medium thickness.
    ·       Stamp out as many circles as you can using a round cutter.
    ·       Pick one circle and put some filling in it and cover it by another circle. Then press the layers. You can use a stamp and impress a pattern on the cookie.

  • When you have made kolompes, preheat the oven at 160 centigrade degree for almost 2 minutes.
  • Cover the oven tray by an oily paper and put the sweets with proper intervals. Leave them in the oven for about 15 – 20 minutes to bake.
  •  When they are ready, you can sprinkle some sesame and pistachio powder on the cookies as a garnish.

Helping tips for making Kolompe Kerman

  • The mentioned recipe is suitable for people who do not want the cookies to be so sweet, as the date has a sweet flavor itself. If you like it sweeter, you can add 100 grams powdered sugar to oil and beat it. Then add the yolk and vanilla, also some warm milk and water (half glass) to the complex. Finally add the flour to it bit by bit to create a creamy paste.
  • If the dough is too sticky, add some extra flour.
  • To ease the peeling process of the date, put them in hot water for some minutes and then peel. Be careful not to leave the dates very long.
  • Amount of saffron is indeed personal taste. You can add extra saffron if you want much golden kolompes.
  • You can make approximately 20 cookies from the mentioned ingredients.
  • Because of being dry, the pastry is ok to be left out at room temperature in cabinets (a leaded container) or at a fridge.
  • If you prefer, you can add some rosewater too. It will enhance the smell of the cookie.

      The bottom is a bit bigger. You can pick one circle shape paste, fill it and wrap it up. Then press it with a stamp.
