Ashe Shoorba | Persian Rice Porridge
Shoorba is a Persian porridge made by rice and meat. This Aush is suitable for cold winter days. If you want to improve your immune system in order to survive winter, better to consider shurba as an awesome friend among winter-warmer recipes.
Shourba is made in many provinces of Iran with their special own way, so you might face different kinds of shoorba called the very same name. No matter how this ash is made, it is one of the immune-friendly dishes. Sometimes people add some small amount of turnip to this Ash and make it much healthier, just like Ashe Shalgham.
Ashe Shoorba | Persian Rice Porridge Recipe
Ingredients
- ½ unit Rice (unit = 1 glass of water with the amount of 200 – 250 grams)
- 200 g Minced meat
- 1 tbsp Fried mint
- 350 g Herbs (coriander, dills, parsley, tarragon)
- Salt as much as required
- Pepper as much as required
- Turmeric as much as required
- oil as much as required
- 1 tbsp Piaz Dagh Fried onions
- 2 Onions
Instructions
- Fetch one of the onions and wash it. Then peel and dice it into small cubic shapes. Pick a pot and grease it with oil, heat it up and fry the onions until they turn soft and golden. Add some turmeric, salt and pepper. Reduce the heat, add 5 glassed of water and put the lid on the pot.
- Wash and soak the rice some time before you start cooking. Then remove the extra water and add the rice to the pot and let the water becomes to the boil with the content in it.
- Pick another onion and wash it. Peel and grate it, then remove the juice and add it to the minced meat. Knead the content and let them become mixed perfectly. Then make balls of the meat content and put them aside.
- Add the chopped herbs to the pot and let them cook with low heat. When the water has vaporized and the vegetables are cooked, add the kufte ghelghelis (meat balls) to the ash. When the meat balls are cooked, your Shoorba is ready, serve it in a suitable dish and have fun.
Notes!
Garnish
- You can use Piaz Dagh (fried onions) and fried mint for the garnish.
- You can served this Ash with Abghoore (sour grape juice) or lime juice and yogurt.
Making Ash
- If you want to add turnip to the ash, add them with vegetables.
- When you add water to the pot, it should be boiled water.
- Remember to keep the heat low. It needs to cook gradually.
- When you are making an Ash containing rice, better to use small seeds or split rice.
