Piaz Dagh | Fried Onions

It doesn’t matter in which country we live, what our culture is, there are some basics that we cannot omit from our cooking, because they affect on the taste of our dish. In Iran one of the basics, is onion.

Fried Onion | Piaz Dagh

Fried onions and Persian cooking go hand in hand. I can assure you that they will be used in most of the Persian recipes. We fry onions, use onion powder and raw onion… If you are interested in Iranian food and their recipes, piaz dagh is the thing which you can't deny.

Ingredients
  

  • Onions as much as required, depending on your needs
  • oil as much as required, depending on your needs
  • Salt, pepper, saffron and turmeric as much as required, depending on your needs

Instructions
 

  • First of all, dice the onions. They should be thin and in the same size.
  • Take a pot and pour some water and place it on the heat. Add a teaspoon salt to it. adding salt to water, makes the diced onions absorb less oil in frying stage. When water has come to boil turn off the heat and put the diced onions into pot. Let the onions stay in the pot for ten minutes.
  • After ten minutes, take the onions out of the pot, and wash them with cold water. Take a bowl and fill it with cold water, then put the diced onions into cold water bowl. Wait for five minutes. Then drain the water with strainer. Take towel and put it in your work table, put the diced onion on the towel. They should be dried.
  • When the onions are dried, grab a plate and mix the diced and dried onions with brewed saffron with hand.
  • Place a pan on the heat and pour some oil. Let the oil get hot. Fry the onions. Keep in mind that you shouldn't add all onions together. Divide them to equal groups, and fry them one by one.
  • When the onions get a little bit golden add some salt to them and after frying for a little time, take the onions out of the pan and put them in strainer. Let the extra oil come out of fried onions.
  • If you are willing to use turmeric instead of saffron, follow this structure.
    After the diced onions got dried, Place a pan on the heat and pour some oil. Let the oil heat up. Fry the onions. Notice that you shouldn't add all onions together. Divide them to equal groups, and fry them one by one .
  • When the onions got a little bit golden add some turmeric and little bit salt. From this step the color of onions changes so fast and you shouldn't fry them too much.
  • Take the onions out of the pan and put them in strainer. Let the extra oil come out of fried onions. Or you can put them on kitchen napkins, until napkin absorb the extra oil.

The amount of the onions totally depend on you. Some people would prefer to cook a more amount of this and store it in a freezer and use it gradually, on the other hand some people prepare piaz dagh for each time they wanna cook.

Fried Onions are used as ingredients in many Iranian dishes during the process of cooking them, they are also used for topping many dishes such as Adas Polo and Aush Reshteh and Aush Shole Ghalamkar.

Choosing right pan is important. We recommend using a heavy pan. For instance Granite pan or Cast iron pan.

You ought to use frying oil or Sesame Oil. Because they have high smoke point. Do not use olive oil.

Don’t forget to stir the pan. Let all of the onions fry together.

Instead of boiling water you can easily use milk. You shouldn’t warmup or boil the milk, just put the onions in milk for some minutes then dry them.
