Shirini Morabai | Persian Jam Cookie

Shirini Morabai is one of the popular cookies among Iranians. It is one of the sweets made for Eid (Nowruz) and it is very tasteful and easy to make. There are other fantastic cookies made for this traditional ceremony, as Nan Berenji and Kolompeh.

This cookie’s lifespan is prolonged and it is a very important point for the popularity of the cookie.

Kids will love to help assemble this shirini (refers to any kind of sweet and cookie). And when done, you should be careful they don’t eat too much of it!

Shirini Morabai | Persian Jam Cookie

Shirini Morabai is a butter cookie filled with Moraba (jam)and it has a fragrant smell owing to vanilla and rosewater (rosewater is optional).When you bite this sweet, the flesh and jam filling melts and makes your head dizzy.
Try this recipe and you wouldn’t regret.

Ingredients
  

  • 2 and ¼ unit (unit can be glass you use for drinkinf water, a cup or a very small bowl) pastry flour
  • ½ unit powdered sugar (a bit more for garnishing the pastry)
  • 1 egg
  • 150 grams butter
  • ½ teaspoon vanilla
  • marmalade or moraba (jam) the desirable flavor
  • 2 teaspoon salt
  • 1 teaspoon baking powder

Instructions
 

  • Mix all the dry ingredients together except vanilla, and then sift several times (flour, salt, baking powder), put it aside.
  • Butter should be in the room and melted gradually in the room temperature.
  • Pick another suitable bowl. Whisk the butter and sugar (preferably by the electric whisk, with medium speed) 2 to 4 minutes. Add the egg to the bowl and speed up the electric whisk.
  • Now it’s time to add vanilla to the egg complex. Whisk again and make an even mixture. Add the dry ingredients to the egg content gradually to have a creamy paste. The paste do not need to be kneaded. It is enough to have an even cream like paste. If the paste is not too sticky, it is ready to use. If not, pack it and refrigerate it for an hour.
  • Take the paste out of the fridge and spread it on the surface with the thickness of 3-4 millimeters. You need 2 stamps. One should be bigger. The smaller one is used for containing the filling. Use a stamp and stamp the paste as you see in the picture. So, you need a stamped dough that has been stamped inside, it is placed on an unstamped center one.

  • Put the doughs on a greased cookie sheet on an oven sheet. Preheat the oven in 150 centigrade for15 minutes. Then put the tray into the oven for 10 to 15 minutes to bake. Watch the cookies. They become too dry easily. When their color change (not to brown. Just a bit creamy) discard them and let them cool.
  • Fill in the cookies with jam or marmalade. Your bewitching cookies are ready to be eaten.

Notes for making Shirini Morabai

  • For making the cookies, you can bake all the stamped doughs and then put jam or marmalade on the complete stamped one and put the holed one on the other and bake for one minute. Then fill the hole.
  • The very great point of this cookie is that they have long lifespan. The jar or marmalade can become unpleasant. For longer remaining time, you can bake the sweets and pack. When you want to eat them, add the jam to it.
  • For baking the cookies without oven, you can used a pan with a lid. Preheat the pan and cover 2 greased cookie sheet and place the doughs and let them cook for 20 minutes.
