Yazdi Cakes | Persian Cardamom Cupcakes

Every Iranian has a childhood memory with Yazdi Cake and it brings a smile on their lips. This cupcake makes an awesome meal for an afternoon gathering, as Baghlava and Kolompeh.

The recipe of this tasteful sweet is originally from Yazd. Other Yazdi sweets are Ghotab and Hajbadami. The sweet is mainly baked for traditional ceremonies and mourning.

Yazdi Cakes | Persian Cardamom Cupcakes

Yazdi cupcakes are a very delicious kind of Iranian sweets, even if you are not fan of pastries, better you try this recipe!
Serving up this cupcake with tea or chocolate milk makes a heavenly taste. Follow the easy instructions below and learn an awesome cake recipe.

Ingredients
  

  • 300 grams pastry flour
  • 3 eggs
  • 200 grams sugar
  • 150 grams strained yogurt
  • 175 grams oil
  • 1 tbsp honey
  • 1 tbsp baking powder
  • 1 and ½ tbsp cardamom powder
  • 3 tbsp rosewater optional

Instructions
 

  • Discard the eggs from the fridge and let them become as the room temperature. Break them in a proper bowl, add the cardamom powder and sugar to them and whisk the content with the electric whisk. Continue until you have a creamy profile.
  • Add the strained yogurt and oil to the complex. Whisk the ingredients for one minute. Add the rosewater and mix.
  • Pick another bowl and mix the pastry flour, salt and baking powder together. Remember to sift the flour beforehand. Add the dry ingredients gradually to the egg mixture in order not to stick together and make particles. If it was like that, whisk it with the slow speed.
  • Pick the cupcake molds or the molds made especially for Yazdi cakes. Grease them with butter or oil. Sprinkle a bit of flour in the molds and pour the content into them. Do not fill them olds, two third of them must be filled. The rest of the mold should be empty for the fluff of the cupcakes.
  • Grease a knife with oil and cut every cupcake smoothly. It makes the cakes puffy and sphere shape.
  • If you prefer, you can sprinkle the cupcakes with pistachio or sesame powder.
  • Preheat the oven in 180 centigrade. Put the cupcake molds in the oven and let them bake for 20 to 30 minutes. For a better color of cupcakes, grill them for 2 minutes. Your lovely Yazdi Cakes ready. Bon appétit!

Notes for Yazdi Cakes

To enhance the taste of Cake Yazdi, you can replace the oil with extra virgin Yazdi oil. Also you can use the natural yogurt instead of the strained yogurt.

You can put cupcake sheets instead of greasing the cupcake molds. In case you do not need oil and flour to prevent the cakes from sticking to the molds.

Several reasons your cupcakes may not puff

  • The ingredients amounts might be inadequate.
  • The time of whisking ingredients might not be proper.
  • The degree of the oven might not be correct.
  • The order of adding ingredients was not as mentioned.
  • The butter or the eggs were not the same temperature as the room.
  • The baking powder was not proper.
  • Too much oil was used.
  • The mold was much bigger than the filling content.
  • The greasing of the mold must be too little. The oil might be absorbed by the cakes.
