Persian Pan Kebab | Kabab Tabei

Kabab Tabei or Persian Pan Kebab, is a type of Kebab (Roast Meat) which is not cooked over fire. It is simply cooked in a frying pan over the flame of the gas burner just like Shami Kabab. Despite the fact that it is so simple to cook, this dish has a magnificent taste and can easily make your mouth water.

Ingredients
  

  • 500 grams minced meat (You'd better use mutton)
  • 2 big onions
  • 4 tomatoes
  • 2 tablespoons tomato paste
  • 2 potatoes
  • 1 tablespoon lemon juice or lime juice
  • 1 tablespoon brewed saffron
  • Salt and pepper as much as required
  • Oil as much as required
  • Turmeric as much as required

Instructions
 

  • Peel the onions and grate them. It's necessary to remove the juice of the onions. Put the grated onions in a big bowl and add the minced meat, some salt, pepper and turmeric.
  • Knead the ingredients completely for several minutes, like Kabab Koobideh, the combination needs to be kneaded for quite a long time, because it needs to reach a good level of consistency.
  • The following step is not necessary, but if you have enough time, you'd better leave the kneaded combination in fridge for about an hour. This will make the dish more pleasant to eat, but it's not necessary.
  • Choose a suitable pot and add some oil to it. Then, put the combination of meat and onions in the pot. Use your hands to flatten the combination all over the surface of pot.
  • Cook the Pot Kebab over a low flame. It needs to be cooked gradually in about 40 minutes. After about 20 minutes, when the meat is half-cooked, you can cut it in shapes that you want. Then turn the pieces of pot kebab around and wait for the other side to cook.
  • To prepare the sauce of Kabab Tabei, stir fry the tomato paste in a separate pan, be careful not to burn it. Once it's cooked and its color and smell have changed, add ½ cup hot water, 1 tablespoon brewed saffron, some lemon (lime) juice and pepper. Mix the ingredients.
  • When both sides of the Kebab are cooked, add the sauce to the pan , meanwhile, cut the tomatoes in half and add them to the pot, waiting for them to cook and fry.
