Bonab kabab

Bonab Kabab is a one-off type of dish that just like Dande Kabab, Joojeh Kabab, Bakhtiari makes you drool over them!

There are many Persian kebabs and they are really fancy! But you would not find a fancier kebab than Bonab Kabab! It is one of the most delicious kebabs you have ever imagined and it can make your meal wonderful and your guests extraordinarily delighted.

There is another fantastic Persian kebab too, which is called Chenje. Persian kebabs are the most wanted dishes ever and usually travelers want to taste these food. If you are planning to visit Iran, never forget about trying Bonab kabab.

Bonab Kabab Recipe

Bonab Kabab is a one-off type of dish. Even the smell of it, while being roasted on fire, can make your mouth water much more than the other dishes do!

Ingredients
  

  • 1 kilogram full-fat mutton
  • 2 onion
  • Salt, pepper, as much as required

Instructions
 

  • First of all, the onions need to be chopped, so peel the onions, wash them and cut them in half. To chop them, using a knife, cut each half-onion vertically and horizontally. But this is still too big for cooking Kabab Bonab. So, use either a cleaver or a sharper and bigger knife to make them smaller. Note that the onions shouldn’t be minced or mashed. Actually the juice of the onion must note merge out of it.
  • Mince the mutton two times and pot it in a big bowl. Little by little and gradually, add the onions and knead the combination. As you are kneading it, add the salt and pepper. When the combination looks mixed and ready, cover the bowl with some plastic wrap. The combination needs to be left in the covered bowl for two to three hours. it doesn’t need to be put in a fridge.
  • Now, the combination must be put on a spit. To do this, there needs to be a bowl of warm water by your side. Note that you wide metal spits are needed. Hold the spit tightly with your left hand. Wet your right hand with some of the warm water and pick up a handful of the combination. To spread the meat on the spit, start from the side of the spit. And then, gradually spread it towards the top and the bottom of the spit. When you are done, use your index finger and thumb to unflatten the combination. You actually are supposed to make peaks and valleys on the surface of the meat.
  • The most interesting step has come! Roasting the dish. At the begging, the flames of the fire or the barbecue, must be high and strong. Place the spits on the fire. The spits must be turned around really quickly (at least every 10 seconds) at this stage. If not, the combination will fall off the spit.
  • After about 2 minutes, the half cooked Kabab must look creamy. The spits don’t need to be turned around so fast at this stage. Wait for the tasty Kabab Bonab to cook gradually,
    and enjoy.

Tips for cooking Kabab Bonab:

The most important step of cooking this dish is chopping the onions. Remember that they should be neither too big (to be felt when eating the dish) nor too small (to look as if they have been minced).

Wide spits must be used.

Saffron can be used as a flavor inside the combination or it can be brewed and then put on the Kabab Bonab (using a brush) after it is cooked over the fire.

This type of Kebab, like the other types, can be served with rice and roasted tomatoes or bread.
