Olivier Salad is actually a famous Russian dish, cooked and eaten in many parts of the world. It has a satisfying taste and can be easily prepared and served, and by making a few changes, it can become such a healthy dish.

Olivier Salad | Potato Salad

This dish is made of potatoes, chicken, mayo and other vegetables. It is served as a cold dish and this salad can be eaten as breakfast, lunch, dinner and even as mid-day snack, depending on the amount of serving.

Ingredients
  

  • 4 eggs
  • 1 onion
  • ½ cup pickles
  • ½ cup peas
  • 1 complete chicken breast
  • 2 potatoes
  • mayo as mush as required
  • fresh lemon or lime juice as mush as required
  • salt, pepper and turmeric as mush as required

Instructions
 

  • Prepare the ingredients.

  • Wash and clean the potatoes. Put the potatoes and the eggs to a pot and add some water. Let them boil and cook.

  • Peel the potatoes and the eggs and then grate them. Put them in a big bowl.
  • Add the boiled peas to the pot.

  • Peel one onion and add the peeled onion and the chicken breast to a pot, add some water, boil and cook them.
  • Shred the cooked chicken breast and add it to the bowl.
  • In a separate bowl, grate the pickles, remove the extra juice of it and add the grated pickles to the main bowl.
  • In a separate bowl, mix the salt, pepper, lemon juice and mayo and add the mixture to the other ingredients. Mix them completely. Taste a little bit of it and if needed, add some salt, pepper or lemon juice.
  • Leave the bowl in a fridge for 2 hours (the longer the better).

In the most common way, after leaving this dish in the fridge for some time, it is ready to be served. It is dressed with some mayo, and topped with some peas, tomatoes and pickles.

It is served with any type of bread (Iranian or non-Iranian). Iranian people serve it with some Sabzi Khordan.

Using a bundt

To give the dish a better appearance, when you are done mixing the ingredients, you can put it in a bundt and leave the bundt in the fridge.

To do so, cover the bottom surface of the bundt with some plastic. Put the salad in the bundt and let it rest in the fridge for some time.

Carefully, take the salad out of the bundt and remove the plastic layer.

Dress it with some mayo. it can be topped with some peas, pickles and tomatoes.

It can be served with any type of bread.

Olivier Salad Rolls

Cut the head and bottom of a baguette and open it wide. Use a brush to dress the inside of it with some mayo and add an adequate amount of Olivier Salad. Spread it and roll the bread. Cover the complete roll with some aluminum foil and let it rest in the fridge for some time.

Remove the aluminum foil and use a sharp knife to cut thin slices of the baguette.

Put them in a dish and top them with some tomatoes, pickles and other vegetables.

Tips for cooking Olivier Salad (Potato Salad)

  • In some recipes, corns, bell peppers and carrots are added to the recipe. We do not recommend that because the outcome will no longer be Olivier Salad.
  • Removing the extra juice of the pickles is necessary. If you don’t do so, an unpleasant smell will be added to the dish.
  • Do not grate raw ingredients in this dish. It will make the dish juicy.
  • To make the chicken breast more delicious, instead of water, you can cook it in some stock.
  • After grating the potatoes, do not add the mayo instantly. Let the potatoes cool.
  • Pickles can make the Olivier Salad over-salty. Make sure to wash the pickles with some cold water before grating them.
  • The chicken can be replaced with some Lunch Meat.
  • If you are overweight, reduce the amount of mayo used. It can generally be substituted with some olive oil. Remember that this dish already has enough calories, so instead of bread, you can serve it with some lettuce leaves.
  • If you suffer from high blood pressure, this dish can be really good for you if you make a few changes. First try not to use pickles. If you really want to use them, use few. Second, substitute the mayo with some olive oil.

  • It is interesting to know that by eating 150 grams chicken breast you take 40 grams of protein! This can give you 70% of your body protein supply.

      Use black pepper more. The bad smell will be vanished away unbelievably.
