Dandeh Kabab Recipe

Dande kabab (kebab of meat chop) with its smoky taste is another one of popular Iranian dishes originally from Kermanshah. the main ingredient of this mouthwatering type of kabab is meet chop dressed with onions, garlic and other flavors .To cook this dish quite a lot of experience is needed.
There are two ways of preparing the meat before cooking it:

Ingredients
  

  • 1 kilogram meat chop
  • 2 onions
  • 2 cloves of garlic
  • 1 cup drained yogurt
  • 1 leaves laurus nobilis a type of Iranian spice
  • Oil, as much as required
  • Sault, pepper as much as required

Instructions
 

  • In the first way, after cleaning and washing the meat chop, put some ice in a bowl and add the meet chop to that bowl. after one hour take it out and rinse it and in order to dry it leave in a sieve.
  • Grate the onions and the garlics and put them in a bowl. Add the oil, drained yogurt, laurus nobilis, salt and pepper to the bowl and mix them. Add the meat chop and mix it then knead it completely with the other ingredients. cover the bowl with plastic wrap and in order for the flavors to blend completely, leave the bowl in the fridge for 5 hours.
  • Now it’s time to cook the Dande kabab

There are three ways to cook it.

  • the best way to cook this dish at home is to grill it because it will cook perfectly.
  • you can roast the Dandeh kabab over fire on barbecue which will make it smoky and much tastier

Ingredients
  

  • 1 kilogram meat chop
  • 1 tablespoons lemon juice
  • Tomato paste, as much as required
  • Salt, pepper, as much as required
  • Solid kermanshahi oil, as much as required
  • 4 wide metal spits

Instructions
 

In the second way, the meat chop is skewered in 4 places and then for wide speeds are put inside the meat chop and the meet chop is left in the fridge for5 hours.

  • When you want to cook the meat chop, it must be dressed with some sauce.
  • To make this sauce, put some oil in a pan and after heating the oil, add some tomato paste and stir fry it completely. Add some salt, pepper, brewed saffron and some Kermanshahi solid oil.
  • Roast the Dande kabab over fire and constantly use a brush to spread that sauce on both sides of the meat. When the meat is completely roasted dress it again with some of the sauce. Note that in this method, the Dandeh Kabab is only roasted over a fire. The flames of this fire mustn’t be high and too strong.

Serving Dandeh kabab

Like many other kebabs (joojeh kabab, bakhtiari and bonab kabab) ,Dandeh kabab is also served with roasted tomatoes, rice, yogurt drink, and Sabzi Khordan.

Tips for cooking Dandeh kabab:

During the process of cooking this dish, the most important thing is to be patient and let it cook properly.

Before cooking Dandeh kabab its necessary to remove the small pieces of onion and garlic from the meet if not during roasting they might burn and make this dish less tasty and beautiful.

Instead of the meat chop of a sheep the meat chop of the cow can be used but the first one will definitely make this dish better.

Adding Kashk to the ingredients can make this dish sourer.

    the sauce I used for marinade was much more than the amounts you mentioned. probably it was not accurate!

      probably you did not remove the onion particles from the meat. it absorbs much of the sauce. first add the sauce and then add the onions.
