Abgoosht | Traditional Persian Dizi

No way you find such a traditional tasting dish that is very delicious too. Abgoosht is a very old Persian dish that is made by meat and its stock. Breadcrumbs are used in this dish and while you add them you keep stirring and then eat this extremely flavorful Persian food. Abgoosht | Traditional Persian Dizi Recipe

Abgoosht is one the most traditional, easy-to-cook, yet popular Iranian dishes. There are several different types of Abgoosht with different names, but the most common one can be called Abgoosht or Dizi (in dishes made of stone). As mentioned before it’s really easy to prepare the aforementioned dish, and the most important element is spending enough time on it. That’s the golden key to have that special Abgoosht everyone talks about.

Ingredients
  

  • 250 grams full fat mutton boned mutton can make this dish more delicious
  • 50-100 grams fat tail
  • ½ cup navy beans
  • ½ cup chickpea
  • 1 onion
  • 4 tomatoes
  • 2 potatoes
  • 2 tablespoons tomato paste
  • 3 cloves of garlic
  • 2 dried limes
  • ½ soupspoon cinnamon
  • Salt, pepper, turmeric, as much as required

Instructions
 

  • 12 hours before you want to cook Abgoosht, leave the chickpeas and navy beans in water. Change the water 2 to 3 times.
  • Cut the tomatoes and the onions in half. Put the mutton, tail fat, tomatoes, chickpeas, navy beans, cloves of garlic, in a pot and add water to the pot. The water must be 6 times more than the other ingredients.
  • Cover the pot with its lid. Increase the heat to get a higher flame of gas burner. Wait for the water to boil. When the water starts boiling, something foam like will be formed on the surface of the water. Use a spoon to remove that.
  • Add the pepper and turmeric. The ingredients must be cooked gradually, so lower the flame of the gas burner and wait for them to cook.
  • After about 2 to 3 hours when the ingredients have cooked properly, peel and cut the potatoes in half. Add the potatoes, dried limes, tomato paste, salt and cinnamon to the pot. We need to wait 1 more hour for the ingredients to cook.
  • It takes about 4 hours in general to be well-prepared
  • When the dish is ready, take out the tail fat and in a separate bowl and mash it, finally add the mashed tail fat to the pot again and stir the whole stew.

Serving Abgoosht

Abgoosht is served in two parts.

First the juice of this stew is served in bowls with small pieces of bread. Many people prefer Sangak bread. Pieces of bead are added to the juice and then eaten.

The second part which contains all the ingredients’ is called Gousht Koubideh (mashed meat).

To prepare it, put all the cooked ingredients in a bowl and smash them. Goust Koubide is served with yogurt, doogh (yogurt drink), torshi and Sabzi Khordan.

Tips for cooking Abgoosht

  • Being cooked gradually, is the key factor to preparing a delicious Abgoosht.
  • For the dish to have a better taste, it’s better to add all the water at once. But, during the process of cooking, if more water is required, make sure to add boiling water.
  • Some people prefer to separate the onions from the dish once the dish is cooked. In this recipe the onions were separated and because of this, the onions were not diced. If you want to serve the dish with onions inside, before cooking the onions, dice them.
  • For the dish to have a better taste, remove the dried limes one hour after adding them.
  • One of the keys to have a mouthwatering Dizi is to add fat of the sheep. This will make it absolutely delicious.
  • Never add the salt from the beginning of the cooking.
  • You can replace the lime juice with dried lime. It will be fabulous.
  • You can also buy the premade spices that are specifically used for ab goosht.
  • You can also make Abgoosht in the oven. To do so you need to pour the content into the pot and place it into the oven.
