Tas Kabab, which is called "Persian Lamb and Vegetables Stew" in English, is a traditional dish cooked in eastern countries especially in Iran. When the Quinces were ripe and ready to be eaten, people used to make a stew-like dish with this fruit! The combination of cooked meat and cooked quinces can cause an increase in their properties. Gradually, other ingredients got added to this dish, making this dish much tastier.

Ingredients
  

  • 2 quinces
  • 3 onions
  • 3 carrots
  • 250 grams mutton and fat tail or 500 grams chicken
  • 2 potatoes
  • 7 (or more) prunes (depending on your taste and preference)
  • 2 tablespoons tomato paste
  • 2 tomatoes
  • salt, pepper and turmeric as much as required

Instructions
 

  •  First of all, chop an onion in rings. They shouldn’t be thin, about 1 cm wide. Cover the bottom of the pot with the fat tail, and put the other ingredients (except for the prunes) on top of that in layers. The potato must be put on the top layer and the tomato must be on top of that. Sprinkle the ingredients with some salt, pepper and turmeric. Water and oil are not needed at this stage. Leave the pot on the flame of the gas burner. The fat tail will gradually melt and provide the required fat.
  • After about 15 minutes, the juice inside the ingredients will emerge out of it. At this point add 2 glasses of warm water and 2 tablespoons of tomato paste. In order for the ingredients to cook, the pot must be covered with its lid and left on the flame of the gas burner. After about 30 minutes add the prunes, the dish needs 30 more minutes to cook completely.
