Soup Jo | Persian Creamy Barley Soup Recipe

This Persian soup is mainly made form barley and the other ingredients are very nourishing and filling too. This soup is made from chicken and herbs. The recipe is not that difficult and it is very tasty and beneficial.

Ingredients
  

  • Half chicken breast
  • 500 g Barley
  • 1 tbsp Lemon or lime juice
  • Ab ghooreh (sour grape juice) as much as required
  • 1 tbsp Tomato paste
  • 2 Onions
  • 500 g Carrots
  • ½ unit Cilantro
  • ½ unit Parsley
  • 1 unit Rolled oats
  • Salt as much as required
  • Pepper as much as required
  • Turmeric as much as required
  • Curry powder as much as required
  • Olive oil as much as required
  • 500 g Mushroom

Instructions
 

  • To make this delicious soup you need to wash barley and rolled oats carefully and then soak them the night before for the better cooking.
  • Pick a small pot and put the chicken breast with 2 glasses of water into it. Add one onion to remove the unpleasant smell of the chicken and also some turmeric for the color of the meat, also curry, salt and pepper for the taste. when the chicken breast is parcooked discard the pot and shred the chicken breast. Then put the shredded chicken breast aside because you will need to add it to content you are going to make in the next step.
  • Dice one of the onions into small pieces. Pick the pot you have considered for cooking the soup. Grease the bottom of the pot and heat it. add the diced onions to the pot and saute them until they are soft.
  • Dice the carrots into small pieces and add them to the pot and saute them a bit, too. You can grate them into big pieces too if you want. When you have stirred them for a while, add the salt, turmeric, pepper and curry to the content. You can add some grated garlic clove too.
  • Chop the mushrooms and saute them with a tbsp. of lemon or lime juice. Let the mushrooms become dry a bit. Then add them to the onion and carrot mixture. Add the shredded chicken breasts too. Now the pot is ready for completion.
  • Pick the soaked barley with the water soaking it and pour it in the pot. Also add some water for the simmering process.
  • Add the fresh herbs to the pot and stir the content well. Let the pot cook on a low heat flame. When the soup is about to become ready you can taste it and add whatever you think can make it taste better. You can also add the sour grape juice and tomato paste and let it simmer a little longer.

Helping notes

  • When the barley is well-cooked, the soup becomes tastier and looks better and it is called “Ja Oftadeh”.
  • You can use butter and fresh lime, it will enhance the flavor unbelievably.
  • To make this soup with milk, you need to heat the milk beforehand.
  • For having more condensed soup, you can dilute 2 tbsp of flour in ½ glass of water and add it to the pot.
  • You can use chicken stock instead of the chicken breast too. Or you can use both depending on your taste.
  • Try to dice the vegetables into small pieces and add them to the soup.
  • Ro have a better looking soup, dice the carrots into really small pieces.
  • You can put the chicken not shredded into the pot and then remove it.
