Iranian Sabzi Polo ba Morgh | Green Rice with Chicken

Sabzi Polo (Rice and Vegetables) is a healthier form of Rice. Of course, because of the vegetables this dish has, it tastes different. This type of rice can be served with chicken, fish and mutton. In this recipe, you'll learn how to cook "Sabzi Polo ba Morgh", which is technically a combination of Sabzi Polo and Chicken.

Ingredients
  

  • 9 cups chopped vegetables (including: leek, parsley, dill, coriander and fenugreek)
  • 4 cups rice
  • 4 pieces (boned) chicken
  • 1 teaspoon brewed saffron 
  • 1 onion
  • 1 sliced potato (for the Tah Dig)
  • Salt and pepper as much as required
  • Tomato paste as much as required

Instructions
 

  • In a suitable pan, wash the rice clean. Then add some water to it (the level of the water should be about 2 centimeters higher than the level of the rice) and leave the pot on a the flame of the gas burner, let the water boil and evaporate completely. When the rice is half cooked, take it out of a pan and put it in a sieve.
  • Boil the chicken pieces with salt, pepper and turmeric. After about 15 minutes remove the extra water. By doing this step, the unpleasant smell of the chicken will be gone.
  • Use a suitable frying pan and add the half-cooked chicken, some chopped onions, pepper and turmeric. Using some oil, fry and cooked all the ingredients. When cooked, add a little salt and brewed saffron to the ingredients.
  • At this point, pre-heat a pot (also, add some oil). Cover the bottom surface of the pot with some potato slices (different types of bread can be used as well). Then ''the half-cooked rice'' and the ''raw chopped vegetables'' must be added to the pot in layers. So, add a layer of rice and then a layer of vegetables, continue this until you run out of ingredients. Note that the half-cooked chicken must be put in the pot too, so after a layer of rice and vegetables, you'd better add the pieces of chicken in the center of the pot and then continue adding the other ingredients in layers.
  • Cover the pot with a piece of cloth (as an infuser) and then with its lid. Let the dish cook.
  • After about 40 minutes, when all the ingredients are cooked, add a tablespoon of oil and water to the pot at the same time. Let it be heated for 5 more minute for the dish to be ready completely.

Topping and serving Persian Sabzi Polo ba Morgh (chicken)

When the rice is cooked, before mixing it with the other ingredient, mix a small amount of it with some brewed saffron in order to prepare some saffron rice.

Mix the rice and the vegetables. Put them in a plate. Top it with some saffron rice, pieces of chicken and pieces of Tah Dig.

This dish is usually served with different types of salad, such as Shirazi Salad and lettuce salad.

Tips for Cooking Sabzi Polo ba Morgh

When cooking the rice in the firs step of the recipe, the rice should only be half cooked (even less than that). Be careful, because if it cooks more than it should, the dish won’t look very well at the final step.

Some people, prefer not to put the pieces of the chicken in the pot. they cook it separately in a pan, with a special type of sauce.

The vegetables should not be chopped in to very small pieces. Because chewing them will give you a better feeling when eating this dish. its more delicious when they are chewed.

Adding vegetables to rice, makes it light, so as you might guess Sabzi Polo is generally light, and for the next meal, you might fell hungrier than you usually do.

      Remember to use damkesh (a piece of cloth to shelter the lid) to absorb the steaming water and it helps the better cooking and not having sticking materials.
