Kotlet | Persian Meat Patties
Ingredients
- 4 potatoes
- 250 grams mined meat
- 2 eggs
- 1 onion
- 1 teaspoon turmeric
- Oil as much as required
- Salt pepper and turmeric as much as required
Instructions
- Peel off the potatoes and grate them.
- Peel off the onions and grate them in a separate bowl because we need to remove the extra juice of the onions. Then add the grated onions to the grated potatoes.
- Now add the minced meat, the eggs, some salt, pepper and turmeric
- Use your hands to strongly mix all the ingredients. After that, a consistent combination will be reached.
- Next, add some oil in a frying pan and wait for it to be heated. meanwhile, use your hands to give the Kotlet oval shapes before frying them. Try to make same oval shapes so that the dish will look more beautiful
- Fry them then in a pan. When one side is cooked, turn them upside down and let the other side fry completely as well.
Topping and Serving Kotlet (Meat Patties)
Pieces of Kotlet (Cutlet) can be served with rice and bread. Make sure that serving them with bread, gives it a better taste.
To serve it with rice, cook and prepare some sauce and top the rices with Kotlet ovals. Since some people might find it a little bit too ”dry” do not forget tomato slices.
But, we recommand serving it wityh bread. It can be eaten as sandwiches or “Loghmeh”s. In both cases, tomato slices, pickles, mayo and ketchup are served next to it.
Preparing some french fries a s a side dish, will make the dish look and taste much better.

Tips for cooking Kotlet (Cutlet)
- It is suggested that you use meat with low fat for better result.
- Boiled or half-cooked potatoes can also be used instead of raw ones, but the outcome won’t look good.
- You can add brewed Saffron to the mixture for its good scent.
- If you use eggs the mixture will be more consistent. You don’t have to use them.
- Get rid of extra oil by putting Kotlets on a pan covered with some pieces of tissue after taking them out of the frying pan.
- The pieces of Kotlet musn’t be too thick ,otherwise the middle parts won’t fry completely.
