Kashke Bademjan | Persian Eggplant Dip
Kashk-e Bademjan is one of the most delicious Iranian dishes highly praised by its fans! It is usually made with fried or even roasted eggplants. For this dish both ways can be followed.
The other main ingredient of this dish is Kashk.
Kashk is a type of dairy product coming from dried yogurt. It can be made in a lot of different forms. To cook Kashk e Bademjan, you need to use Kashk in its liquid from just like Ash reshteh. Scroll down to read the recipe of this tasty dish!
Kashk e bademjan
Ingredients
- 6 or 7 eggplants
- 1 onion
- 2 soupspoons grated raw garlic
- 2 soupspoons dried mints
- 2 soupspoons walnut powder read the tips
- 5 tablespoons Kashk
- Water, as much as required
- Oil, as much a required
- Salt as much as required
- Pepper as much as required
- Turmeric as much as required
Instructions
- First peel the eggplants and cut them in half. Sprinkle the eggplants with salt. This will make the extra water (juice) of the eggplants emerge out of it. Because of this juice the eggplants might taste bitter. So it’s a good idea to wash and dry them.
- Use some oil to fry the eggplants. Using a lower flame of gas burner, will help the eggplants be cooked completely.
- Now, put the eggplants in a bowl. Use a masher to mash them. The texture of the eggplants must remain, so neither mash them strongly, nor use an electric masher.
- Dice or grate the onion and then fry then fry it until it looks golden. Add the garlic, pepper and turmeric and stir fry them for a short while, then add the mashed eggplants and once again stir fry them.
- As the eggplants are being stir fried, use some oil to stir fry the dried mints. The mints shouldn’t be left in the oil for a long time because the taste of mints can change to bitter, easily and fast. So just heat them with a little oil.
- It’s time for Kashk. First add 2/3 glass water to it. Now add the Kashk and the fried mints to the eggplants. Also, Add the walnut powder. Leave the whole thing on the gas burner so that it will be prepared. You can also taste it in thus stage, and if it wasn’t salty enough, add some salt.Our magical Kashk-e Bademjan is ready.
Tips to make a better Kashke Bademjan
- You can use some Piaz Dagh for a garnish.
- If you want a healthier dish with fewer calories, you’d better roast the unpeeled eggplants over the fire or the gas burner. On the other hand, frying eggplants will make your dish look more beautiful.
- To have the required amount walnut powder, you need 5 to 7 walnuts. Use an electrical masher to change them into a powder.
