Potato Patties | KooKoo Sibzamini
Ingredients
- 1 tablespoon white flour
- Oil as much as required
- Salt, pepper, turmeric and dried dills as much as required
- 5 potatoes
- 1 onion
- 3 eggs
Instructions
- Boil the potatoes for 30 minutes, when they are half-cooked, peel and mash them.
- Peel and dice the onion and add it to the mashed potatoes.
- Add the eggs and some pepper, salt, dried dill and turmeric then mix all the ingredients gently.
- Put some oil in a suitable frying pan and wait for it to heated. When it’s ready fry the mixture inside it. After some time, when the dish looks less soft, cut it in shapes that you want. Turn the pieces upside down and let the other side fry as well.
Topping and Serving Persian Potato Patties
Put the pieces of Potato Patties in a pan. It can be topped with bigger pieces of walnut and barberries.
This dish can be served as a side dish at lunch and dinner. It can be served as a healthy breakfast and if you get hungry during the day, you can cook and enjoy it.
KooKoo is eaten with bread as “loghmeh”s. Some ketchup, pickles and salty cheese can make you enjoy it more.
Tips for cooking KooKoo Sibzamini
- Do not use a lot of onions because your Potato Patties might be weak and not consistent enough.
- If you are using a bundt for frying the potato patties, remember to heat it up first otherwise the food might get stuck on it.
- You can use different dried vegetables in this food such as mints, basils and thymes.
- The appropriate thickness for KooKoo Sibzamini is between 1 to 2 cm, you can cook it a you want to. But if it’s too thick, the middle parts won’t fry completely.
- Mozzarella can be added to the ingredients of this dish. It can also be used to top the patties. Remember that adding that increases the calories of this dish.
- 1 or 2 tablespoons of brewed saffron can give the dish a more unique taste.
- After taking the pieces of KooKoo Sibzamini out of the frying pan, put them in a pan whose bottom surface has been covered with some pieces of tissue. The extra oil will emerge out of the pieces of patties and it will be absorbed by the tissue, making the dish healthier.
- Some people recommend grating the half-cooked potatoes. This is not much recommended because the outcome won’t look good..
- If the mixture of the ingredients isn’t consistent enough, it can be because you have used too much egg. Simply add some flour to make this go away.
- leaving the mixture of the ingredients in the fridge for about an hour, makes the dish more delicious.
