Persian Mahi Shekam Por Recipe
Ingredients
- 1 Fish
- 2 cloves Garlic
- 300 g Mint, parsley and coriander
- 3 tbsp Pomegranate molasses
- 2 tbsp Walnut diced or grated
- Fish spices as much as required
- Fresh lime juice as much as required
- Salt as much as required
- Black pepper as much as required
- Oil as much as required

Instruction for making stuffed fish on the gas burner
- For the fish you need the whole one. It is better to choose a whole white fish or a whole trout fish. Still the choice is yours, you can choose any other kind of fish you prefer and feel comfortable with. When you have chosen the fish, it is time to clean and prepare it. Use a shape knife to cut the fish vertically. Then discard whatever is in the fish body. Then wash the inside and outside of the fish to remove any remaining unwanted particles. Then pour some fresh lime or lemon juice and sprinkle some salt in and out of the fish and let it rest for a while.
- Then clean and wash the fresh herbs and when they are dry, chop them into small pieces. Then add the pomegranate molasses and grated walnuts, pepper, salt, fish spice, garlic and stir them completely to have them mixed and flavored.
- When the stuffing was ready, stuff the fish body with them and sew the fish body in order not to have the filling discarded from it. then pick a suitable frying pan and grease it with oil and heat the pan. When the oil is hot, place the fish in the pan and reduce the heat. Flip the fried side of the fish when done and then serve it in a proper plate.
Instruction for making stuffed fish in the oven
- When you stuffed the fish with the filling material, and sewed the layers, turn on the oven in 200 cg or400 F and let it warm up.
- Dice some onions and bell peppers in silvered shape and cover the surface of the tray you want to put the fish on. Place the fish on the covers and cover the surface by a foil. Be careful that the foil should not touch the fish. When the oven is completely hot, put the dish in the oven for 45 minutes. Then discard the foil and grill the fish for a while. Your delicious fish is ready. You can serve it by polo or sabzi polo.
Tips helping you have a better mahi shekam por
- You can fry the fish a little bit, then stuff it and again fry it.
- You can keep half of the stuffing, half fry the fish, fill it and then place the stuffed fish in the other half of the stuffing and add 1 cup of hot water and let it boil for a while.
- Never use a lid for the dish you place in the oven.
- If you want to make your fish fancier, you can beat one egg into 2 tbsp of cold water and cover the surface of the fish with it.
