Dampokhtak Persian Recipe | Dami Baghali
Have you ever heard the name of the dish Dam Pokhtak in Persian food? This turmeric rice with fava beans is a great traditional Persian dish that is easily made. Just make this pilaf once and you will fall in love with it.
Dampokhtak | Persian Turmeric Rice with fava beans
Ingredients
- 3 cups rice
- 2.5 cups peeled Fava Beans
- 3 onions
- 60 grams butter
- Salt, pepper and turmeric as mush as required
Instructions
- About 4 hours before you want to cook this dish, leave the beans in some water so that they will absorb some water.
- Chop the onions and use some butter to fry it. Butter is used instead of oil. It gives the dish a more unique taste.
- When the pieces of onion get golden, add some turmeric and continue frying them.
- Separate the water from the beans and add the beans to the onions. Stir fry them for a short while.
- Add a glass of water. Wait for the beans to cook (and the water to evaporate|).
- In a separate pan, add the rice and 3 glasses of water and some soil. Wait for the water to boil and the rice to cook. When the rice has expanded in rice and the water is gone, the rice is ready to be mixed with the other ingredients, so mix them completely.
- To complete the process of cooking, the ingredients must be put in a different pot but first add some oil to the pot and to have some lovely, crunchy Tah Dig, cover the bottom of the pot with some bread and add the other ingredients. Leave the pot on the flame of the gas burner, and let the DamPokhtak cook for about 45 minutes.
Serving DamPokhtak (Persian Turmeric Rice)
- This simple-to-cook dish just like Etamboli is usually served with some yogurt, Torshi, Sabzi Khordan. Many people add some fried eggs to the dish when serving it. Do not forget Salad Shirazi next to it.
Tips for cooking Persian Turmeric Rice
- At the begging, when melting the butter, add a little oil to it. The oil won’t let the butter burn.
- The turmeric, gives the dish its yellow color. So the amount of it, must be more than usual.
- This type of bean cooks so quickly, so do not overcook it.
- For 500 grams rice, 250 grams Fava Beans are required.
- The amount of the calorie mentioned in the recipe has been calculated with one fried egg. Each fried egg has about 80 calories.
