Not only do you save money because you don’t have to buy boxed stock, the stock itself is so much healthier for you because of all the iron, collagen, and vitamin-rich marrow from the bones.

Now you might ask what is the difference between stock and broth? You should know that stock is made from bones but we call any water from cooked meat and vegetables, broth.
You can use chicken's wing and its neck to cook chicken stock.
There are several ways to make chicken stock. Three of the best methods are presented here.
Course basic cooked ingredients for dishes

Ingredients
  

  • Leftover bones and skin from a large cooked or raw chicken carcass (or two rotisserie chickens)
  • Celery tops and 1 large celery rib cut into 2-inch segments
  • 1 onion (quartered), no need to be peeled
  • 2 carrots cut into 2-inch segments
  • 1 bunch of parsley
  • Salt as much as required
  • 10 pepper seeds

Instructions
 

Method 1 – Using a Pot (this method takes about 15 hours)This method can be the best provided that you have access to a large pot in which you can put all the ingredients. This method requires patience & checking the pot constantly. Most of the water evaporates in this method so we need much water.

  • Put the toasted bones in an eight-liter pot
  • pour 16 cups water and 1 table spoon apple vinegar in the pot and add 1 teaspoon salt. When the water has come to boil reduce the heat and put the lid of the pot and let the content cook for6 hours gently. Then add onions, celery, carrots and 2 cloves of garlic.
  • Continue cooking for 9 hours (in total 15 hours)

Method 2 – Using a crock pot

  • Put the toasted bones in a 6 liter crock-pot.
  • Add 12 cups water with 1 tablespoon apple vinegar and 1 teaspoon salt.
  • Set the heat on a low mode for 15 hours.

Method 3

  • Pour the toasted bones and water into a 6-liter pressure cooker.
  • Add the onion, celery, carrot, garlic, bay leaf, 1 tablespoon apple cider vinegar and 1teaspoon salt.
  • Add 10 to 11 cups of water or until 2/3of the maximum line is filled in the pot.
  • Select the soup or bone water mode and set it to 2 hours (120 minutes). The pressure cooker will first heat the ingredients and then cook the ingredients on high pressure for 2 hours (120 minutes).
  • When cooking is complete, wait 30 minutes for the pressure to drain naturally, then release the pressure. (I often use oven gloves for more safety on the valves).

Tips for cooking Chicken Stock in a better way

  • The amount of onions and carrots should be less than meat and bones so that the taste does not dominate the stock.
  • Remove the materials that accumulate on the pot with a ladle to have a clear stock.
  • Do not add salt or if you do, keep it in mind when you are cooking with stock; so that your food does not become salty.
  • You can wrap fragrant leaves and large seeds of spices in a thin clean cloth. Tie tightly and put with other ingredients in the pot. This way you can have a meat stock with a great aroma.

How to store the chicken stock

First, let the chicken stock or the meat stock reach room temperature. Then pass it through a strainer and pour the liquid into a glass or jar. Cover the dish with its lid and put it in the refrigerator. For freezing, you can use a zippered bag, plastic containers, metal or even ice molds.

      Yes sure, just remember you have added salt in order not to have salty dish when you use the chicken stock.
