The Easy-to-make refreshing soup is an ideal choice for everyone. It is cheap with a cooling temperament and you can whip it up in minutes.

Abdoogh Khiar basically consists of water, yogurt and cucumbers. The ingredients totally depend on your taste and the surprising point is that you can even remove the ingredients mentioned in the name of the dish, like cucumber.

Herbs play a significant role in flavoring the soup. Add the magical vegetables and guess what happens, the yogurt turns to a heavenly meal.

Ab Doogh Khiar | Persian Cold Yogurt Soup

Ingredients
  

  • 250 grams Yogurt (sour or sweet depending on your taste)
  • 400 grams Small cucumbers (diced in small pieces)
  • 2 tbsp Cream
  • 1 liter Doogh (diluted yogurt) Optional
  • 100 grams Walnut
  • 100 grams Raisins
  • 200 grams Sabzi Khordan (mint, parsley, dill, terragon, basil)
  • Dried herbs (dried mint, dried dill) as much as desired
  • Powdered dried basil as much as desired
  • Crushed rose petals as much as desired
  • salt as much as required
  • Breadcrumbs, cubed ice and water

Instructions
 

  • Pick a suitable bowl for yogurt. It is recommended to use strained yogurt. Whisk it properly, whether using an electric whisk or else to have a creamy yogurt. Add the breakfast cream to it and whisk again to have an even mixture.
  • Wash the cucumbers, if you prefer peel them and dice them into small pieces. You can grate them too. Add the shredded cucumbers to the bowl. Beat the mixture well enough.
  • Wash Sabzi Khordan and chop them into small pieces. Add them to the bowl and beat properly.
  • Wash the raisins and dry them. Cut the walnut into small pieces and add them both to the bowl.
  • Now it’s time to dilute your Ab Doogh Khiar. Dilute the content with cold water gradually. Not too dilute or too condensed, reach your desirable concentration.
  • Let’s make your easy dish pretty looking. You can use crushed rose petals, dried herbs mentioned above and powdered walnut for a garnish. Your Ab Doogh Khiar is ready. Add breadcrumbs to the bowl and serve it.

Notes

  • Walnut is rich in folic acid, K and P elements and reduces LDL. Also because of high amount of vitamins, makes malaise and tiresome better.
  • Raisins contain healthy vitamins and minerals. They are also fat-free and cholesterol-free, high in antioxidants, and an excellent source of fiber.
  • Tarragon has many impressive health benefits, including the potential to reduce blood sugar, inflammation and pain, while improving sleep, appetite and heart health.

Ab Doogh Khiar and Naser al-Din Shah Qajar

There is a real yet funny story about Ab Doogh Khiar and Naser al-Din Shah Qajar, the third longest reigning monarch in Iranian history. One day Amir Kabir, chief minister to Naser al-Din Shah, rises against the lavish expenditure of royal family members and offers the king to live like normal people and eat the same meal they serve. He accepts the challenge and asks chef to do as Amir Kabir requested. The ingredients needed were listed as below:

  • High quality High fat yogurt 1 man (equal to 3 kilograms)
  • Thin cucumbers of Varamin 2 mans
  • White-center walnuts of Baneh 1 man
  • High quality onions of Hamedan 1 man
  • High quality with no pit 1 kilogram
  • High quality Khash Khash breads 3 mans
  • Seasonal herbs and fresh mint 1 kilo

When Naser al-Din Shah Qajar ate the delicious Ab Doogh Khiar, turned to Amir Kabir and said “My people eat such tasteful food and I know nothing about it! Cane whoever protests and is unsatisfied!”

Raisins, Are They Good For Your Body?

Raisins are very beneficial and they have numerous health benefits for your body that we are going to introduce them to you!

What are raisins? They are grapes that have been dried. What happens when grapes dry? The sugar and the nutrients becomes concentrated in the dried form. They are rich in protein, carbohydrates and fiber. They contain no fat. The minerals in them are considerable too, they are a fantastic source for Iron, potassium and cooper. They also have high amount of vitamin B and magnesium. If you are looking for a beneficial Ab Dugh Khiar, better to add raisins to it, too.
