Iranian Stuffed Peppers | Dolmeh Felfel
Persian Dolmehs have a special place in Iranian meals! Dolmeh Felfel, Dolme Bademjan and Dolmeh Barge Mo are two of them.
Dolmes are very appetizing looking dishes that are made with stuffings in special fruits and vegetables, then cooked altogether. Dolme felfel is one of themost famous types of dolmas. This dish is made in a very easy way and the instructions are so explicit to follow. The promising point of the recipe is that you can change the stuffing the way you prefer.

Iranian Stuffed Peppers | Dolmeh Felfel
Ingredients
- 3 bell peppers
- 200 grams minced meat
- 1 onion
- 1 eggplant
- 1 tablespoon of each vegetables (minced) (Leek, parsley, coriander, dill, spearmint, tarragon and service berry, )
- 100 grams mozzarella
- 2 tablespoons tomato paste
- 1 soup spoon turmeric
- Salt and pepper, as much as required
- Oil and water, as much as required
Instructions
- In the first step, peel onions and grate them. Now grab a pan, pour some oil, add the grated onions and let it fry. After a while, add the mincemeat to pan, and stir them gently.The first step is just like how you cook Stuffed Eggplants .
- When color of meat changes, it is time to add the turmeric, salt, pepper, tomato paste and two tablespoons water. Stir all ingredients in order to let the tastes get combined
- Wash the eggplants and peel its skin. Chop them nicely. Grab another pan and fry them with some oil.
- When the eggplants are ready and fried, add them to other pans which contains the minced meat mixture. Now let them fry on a low flame for five minutes. This action helps the taste get together.
- After that five minutes add the minced vegetables and stir the ingredients. Wait for another five minutes. After that, put out the flame.
- It is time for the beautiful bell peppers! Wash them, and cut their tips, remove the the flesh and seeds inside it. Fill them with the mixture that you've prepared and top that with some mozzarella. Sine they are going to be cooked in an oven, put the full bell peppers in a Pyrex plate or an oven tray. Once again topped the stuffed peppers with a combination of water and tomato paste.
- The dish needs to be cooked in an oven for 20 minutes at 180 degrees C.

Ingredients
- 150 grams minced vegetables for dolma (Leek, parsley, coriander, dill, spearmint, tarragon and service berry)
- 4 bell peppers (Try to use colorful ones)
- 1 onion
- ½ cup rice
- 1 cup fried onions
- 150 grams minced meat
- 1 cup Cooked cotyledon
- 1 teaspoon lemon or lime juice
- Salt, pepper and turmeric, as much as required

- First of all, wash the rice and cook it in some boiling water and then remove the extra water to make it half cooked.
- Now wash the cotyledon, cook them in some boiling water.
- After chopping the onion, fry it in a pan using some oil. When it looks, fried add the minced meat and stir fry it in the same [pt.
- When the color of meat changes add some turmeric, salt and pepper. Stir them completely. Then add the vegetables and once again mix the ingredients.
- Mix the cooked cotyledon and the half cooked rice and then add them to the pan,and in the final minutes add the already-fried onions. It's a good idea to taste the combination to check if it needs any salt or pepper.
- It is time to cut the top part of the bell pepper remove everything is inside it. Keep the head of the bell peppers. Fill inside the bell peppers with mixture you have prepared and then put their top parts back..
- Now let's head to make dolma sauce. Fry two tablespoons of tomato paste in some oil. Add some pepper and a soup spoon of lemon juice, also a glass of boiling water. Mix them completely until they look consistent.
- Now pour the sauce into a suitable pot and put the stuffed bell peppers in side it. Use a suitable flame and let the pieces of dolma cook for about an hour.
Vegetarian Bell Pepper Dolma Recipe
Ingredients
- 4 bell peppers
- 50 grams butter
- 2 tablespoons dries basils
- 1 tablespoon minced parsley
- 4 onions
- ¼ cup milk
- ¼ tablespoon saffron powder
- 4 potatoes
- ⅓ cup oil
- 200 grams mushroom
- 200 grams mozzarella
- 1 teaspoon turmeric
- Salt and (red) pepper powder as much as required
Instructions
- First of all, cut the upper parts of peppers and separate them. Then, make the inside of the peppers empty. Fill the pot halfway with water and add some salt to it; put the pot on the stove.
- When water starts boiling, add the bell peppers to the boiling water and leave it for two minutes (until the peppers get soft). Take them out and make sure that there is no water inside of the bell peppers.Add potatoes to the boiling water and let them cook.
- Wash the mushrooms and chop them.
- Dice the onions as well. Fry them with oil for some minutes. Don’t forget to add salt and turmeric to them.Smash the potatoes and mix them with milk and butter and add the mixture to your frying pan.Now add basil and parsley to frying pan.It is time for chopped mushrooms to be added to the mixture.
- It's saffron's turn, add saffron powder to others.Add the grated cheese pizza to the mixture and stir them.Fill the bell peppers with your mixture and add cover the top of it with cheese pizza. Pour some oil into the oven tray, place the peppers on it and put it in the oven.Turn on the oven and set the heat on 180 centigrade degrees. wait twenty minutes for your dish to get prepared.
Tips for preparing stuffed peppers
- It is better to leave the cotyledon in water the night before you want and let them soak in water.
- If you are using an oven, do not forget to preheat the oven before putting the oven tray inside of it.
