Sholeh Zard | Saffron rice pudding

Sholeh Zard or as some say Iranian saffron and rice pudding is a golden and light-textured dessert that Iranian serve in their very special ceremonies.

If next time you craved a sweet and soft dessert after having your meal, but nothing could sate your appetite, simply go for making this delicious and delectable Iranian dessert which will definitely make your mouth water.

Sholeh Zard alongeside other Iranian desserts like Halva can be eaten as a warm dessert and also you can enjoy eating it when it’s cold. Anyway, it’s a heavenly flavorful dessert, as Shir Berenj pudding. But note that Sholeh Zard, with its nutritious ingredients, is kind of rich, so it would better be served in a small amount.

Ingredients
  

  • 1 cup rice
  • 6 cups water
  • 2 cups sugar
  • ¼ cup almond slices
  • 50 grams butter
  • ½ cup rosewater
  • ¼ cup grinded and brewed saffron
  • ¼ teaspoon grinded true cardamom
  • Cinnamon, pistachio slices and almond, as much as required

Instructions
 

  • The night (about 12 hours) before you want to cook Sholeh Zard, leave the rice in some water.
  • Use a pot. Pour the mentioned amounts of water and rice into the pot. After the water starts boiling, lower the flame of the gas burner. By doing this, the rice will cook and soften. It’s important that the rice be well-cooked and softened.
  • After leaving the rice on the gas burner for about one hour, the rice will be well-cooked. Now the sugar must be added.
  • Pay attention that in the following step, the flame of the gas burner must be lowered. Add the butter, saffron and true cardamom which you have already prepared (as mentioned in the ingredients). Meanwhile, in order to prevent the dish from being stuck-on, it’s necessary to stir the dessert.
  • It takes 2 to 3 hours for the cooking process to be finished. When you think it has the consistency you want, add the rose water and true cardamom. After adding them, the stew needs to be heated for 5 more minutes. After that put out the flame of the gas burner
  • Finally add the sliced almonds, which you have already left in water.

The following things can be used as the topping: almond and pistachio sliced, cinnamon and dried roses. It is up to you to design your plate of Shole Zard with different toppings . We can say a plate

Tips for making Sholeh Zard

Rather than the common long-grain rice, it’s better to use short-grain kind. It will need less time and water to be cooked. In this recipe long-grain rice has been used.

Sliced almonds can be added in the dessert. Chewing them, can be a delight! But they can only be used as a topping.

It’s important to add the sugar after the rice has been completely cooked. Also, after you have added and heated the sugar, the combination looks waterier. So, if before that, it doesn’t look watery enough, do not add any water.

In the final steps, if you think the dessert is not watery enough you can easily add some water to it. On the other hand, if you think it’s too watery, you can leave it on the gas burner for a longer time.

Saffron and its wonderful health benefits!

As you know this Persian pudding is mainly made from rice and saffron (Zaderan). Better to know more about the dominant ingredients of the dessert.

  • Saffron is rich in antioxidants, what can be better than that? Antioxidants, as you might know, lower the risk of cancer.
  • It can have antidepressant effects and improves your mood. Why would not you want to try it?
  • It has been said that it can be effective in PMS too, so if you are a girl and you are suffering from premenstrual syndrome, try this pudding. It might help or not, you wouldn’t lose anything!

    wow I do remember a memory from shode zard. days back in iran when I was about 10 or so, my mom was holding a nazri in ramadan. everybody was invited and she made a very large pot of Shole Zard. The smell of the saffron is still in my head. she was just stirring it with very big spoon and gave everyone a small bowl.

    shole zard is a very famous dish made in ramadan. muslims have their iftar with this delicious pudding. the pudding is so sweet and nourishing that gives the fasting a great time. I used to fast for the promissing shole zard. the way it is made, makes you get carried away and eat large amount of it.

    my children love and adore the pudding. it is much better than any other puddings I have seen. making it though needs focus and time. but the result is something worthy. I loved the pudding and I will make it again. it is now one of my top list recipes.

    shole zard is a great persian pudding. it is awesome. it is very delicious and I could resist eating 3 bowls at a meal. the rice in it is a brilliant idea. I don’t think you can find a better recipe to use rice than shole zard. I loved it. thanks.

    I remember when I was a little girl, my grand ma used to make shole zard for every weekend afternoon. we used to go to their houses every weekend and it was really fun. because she had very special dishes and they were all delicious. one og the, was shole zard. I hope she rests in peace.
