Persian Pomegranate stew | Ash-e Anar

The longest and darkest night of the year is a time when friends and family gather together to eat and read poetry (especially Hafez) until well after midnight. Fruits and nuts are eaten and pomegranates and watermelons are particularly significant. The red color in these fruits symbolizes the crimson hues of dawn and glow of life. The poems of Divan-e Hafez, which can be found in the bookcases of most Iranian families, are read or recited on various occasions such as this festival and Nowruz. Shab-e Yalda was officially added to Iran’s List of National Treasures in a special ceremony.

Yalda night, is the longest night of year. People eat snack and nuts, fruits and vegetables, hot and cold beverage. About fruits, there is a main fruit that is the symbol of that night. Pomegranate is the symbol of Yalda night, a lot of things and food are designed by Pomegranate that night, there are dishes, drinks and snacks made with it! There are several different dishes but today we want to take a look at one of them. The dish is called Pomegranate stew (Ash Anar). Here it’s a good piece of news for vegetarians! Anar stew can be cooked either with meat or with herbs.

Ingredients
  

  • 400 grams minced meat
  • 10 cups Vegetables for Stew (Sabzi Aush) (Coriander, parsley, Dill and spinach)
  • 3 cups rice
  • cup cotyledon
  • 7 onions
  • 6 glasses pomegranate juice
  • 1 tablespoon brewed saffron
  • Salt and black pepper as much as required
  • liquid oil as much as required

Instructions
 

  • At first, to make Pomegranate soup chop the onions. Now take a pan and put the chopped onions into it and fry them with some oil. Pour some oil in the pan and turn heat to medium, add the chopped onions to the pan and Let the onions fry until they get golden.
  • Now grab a pot and pour some oil into it, add mincemeat to the pot. Also add salt, black pepper and turmeric, stir the them and let the taste of ingredients be combined nicely. Wait until the mincemeat's color changes. When the color changed is time for next step.
  • Add cotyledon and let them fry together. Keep in mind that cotyledon should be raw.
  • After a while add Sabzi Ash which contains coriander, parsley, Dill and spinach to the pot with rice and fried onions. Stir them completely. Now add the liquids which are pomegranate juice and water. Set the heat on medium degree, it should cook slowly and all the taste should mix with each other perfectly.
  •  The way to cook pomegranate soup requires patience & lasts for three or four hours.
  • In the middle of cooking process add pomegranate molasses to the pot.
  • In the last ten minutes add a tablespoon of brewed saffron, this action causes a better smell of your dish.
  • The food is ready! Grab a porringer, pour pomegranate ash in it and enjoy it.

How to serve pomegranate stew?

  • As you know, the Persian cuisine i filled with stews and many of them are served in the same way.
  • This stew can be served as a main or side dish, with fresh bread next to it.

Tips for cooking Ash Anar

  • If you are a vegetarian you can add beet instead of minced meat, beet should be chopped in medium sizes and hen be added to the pot in the middle of the process of cooking.
  • You can add meat Stock pills if you don’t use minced meat.
  • Instead of rice, groat is a good option too. Even you can combine the two of them, half rice and half groat.
  • If you don’t want to add cotyledon, pea, lentil or wax beans are suitable but only use one of them. If it is your decision to avoid using cotyledon, you should put the cereal in the water from a night before to let it soak and cook more easily. Also you should cook them before you add them to pot.
  • If you feel the water isn’t enough, you can pour more.
  • Do not buy convenience pomegranate juice, make it at home. There is a big difference between the taste of these two when it comes to cooking.
  • You can garnish your dish with fried onions and fried mint and by adding them on your dish. Notice that mint should be dried and smashed. Mint and onion should be fried in different pans, when you want to add dried and smashed mint to the pan, the oil shouldn’t be too hot, it should be warmish. You should stir the mint repeatedly and add turmeric to it and stir repeatedly, if mint fries too much it will taste bitter. Also the heat should be set on low.
