Persian Faloodeh | Lime and Rosewater Granita with Noodles

Faloodeh Shirazi Recipe
Ingredients
- 300 g Starch
- ¼ glass Rosewater (glass=250 g)
- 1 glass Sugar
- 4 glass Water
- 1 Lime
- Cherry syrup optional
Instructions
- Pour 2 glasses of water in a pot and heat it up. Then add the sugar gradually and keep stirring to have it all dissolved in the water. The time sugar is dissolved, leave stirring and let the syrup becomes dense.
- Now it is time to add rosewater and stir again. Wait until the syrup boils. Then discard the pot from the heat and wait until the syrup cools. Then pour the syrup in a suitable dish and put it into the freezer. It has to freeze. When it froze, discard it from the freezer and put it into the mixer. After turning it into powder, put it back into the freezer.
- Pour the remaining 2 glasses of water into the pot and heat it gradually and smoothly. Then add the starch gradually to the water and keep stirring properly. Then leave the pot for a while, the water needs to vaporize and the starch becomes condensed. When it becomes dense, stir the content with a spoon. The content should be sticky too.
- Pick a bowl and place some ice cubes in it. Pick a colander with medium or small holes in it and pour the starch to it. The noodles will come out and they will be created. The ice bowl must be under the colander for the noodles. Stir the noodles and iced cubes gently to have soft noodles, not hard ones.
- Discard the powdered content from the freezer and add the noodles to it. Now the Faloodeh is ready! You need to serve it in the desirable dishes and add some lime and cherry syrup to it if you want.

- The syrup must be icy and cold while adding the noodles.
- Do not reduce the amount of sugar as it will be frozen in the freezer as water does.
