Moraba Havij | Persian Carrot Jam

Moraba Havij is one of the most delicious and popular Iranian jams. Nothing replaces the colorful, tasty and fragrant jams on the breakfast table. Persian carrot jam is very easy to prepare.

For having a well-cooked carrot jam, it’s necessary to cook it for two hours at a very low temperature. If the stove flame is high, you’ll see sugar on the walls of the saucepan, and the inclusion of these concentrated ingredients in your carrot jam makes it too sugary.

On the other hand, if the jam is not cooked well enough, it will become moldy. Therefore, pay attention to the sufficient concentration of jam and low flame when cooking it.

Equipment

  • To make home made carrot jam, first cut the top and bottom of the carrots with a knife and peel them. Put the carrots in a strainer and wash thoroughly. Then set them aside to remove excess water.
  • At this stage, grate the carrots with a fine or coarse grater and pour them into a pot, preferably copper. Then place the carrots on the stove and allow them to soften slightly over low heat.
  • You should fry the grated carrots continuously to change the color a little and then add 2 glasses of water to it.
  • Add the sugar and saffron, little by little to the carrots and stir with a spoon until completely dissolved in the water.
  • And after ten minutes, add cinnamon stick, lemon juice, rosewater and cardamom seeds to the carrots and let the jam simmer over low heat for 2 hours.
  • Finally, add sliced​​almonds to the jam and remove from the heat.
  • Once the carrot jam is ready, you can pour the pistachio slices into it and use it to decorate.
  • The concentration of carrot jam should be neither too hard nor too loose. Because if the jam hardens too much, it becomes too sweet and if it’s loose, it becomes moldy. So be careful to turn off the stove when the jam reaches a balanced concentration.
  • After the jam has cooled, pour it into a jam jar and put it in the refrigerator.

Ingredients
  

  • 500 grams of carrots
  • 500 grams of sugar
  • 2 glasses of water
  • 2 tablespoons rosewater
  • 1 tablespoons Lemon juice
  • Slice pistachios (optional)
  • Cardamom seeds (optional)
  • 1/8 teaspoon Saffron (use it dry)

Tips for preparing Moraba Havij

• Never use a spoon not well cleaned to stir the jam because it causes the jam to  mold quickly.

• You can also use fresh slices of orange peel (about 1/2 cup or two tablespoons) .Of course, you have to boil them a little and put them in cold water for a few hours before using it.

• Boil the orange peel 3 times in water so that they don’t taste bitter.

• Signs of jam consistency: Pour some syrup in a spoon, if the juice does not spill from the spoon after rapid cooling, it means that the syrup has become consistent.

• Cause of moldy jam: low sugar, not consistent, not fully cooked.

• The reason for the excessive sweetness of the jam: This happens for jams and juices. The reason is when the jam or juice boils too much or the sweetness is too much, they become very sugary. The solution is that to add a little boiling water and some lemon juice to the syrup or jam and let it boil for a while until it tastes less sweet.

An interesting way to make moraba havij is to cut the carrots lengthwise and shape them into roses. Use a toothpick to hold them in place. Use flower-shaped carrots in the same way as grated carrots to make jam.
