Mash Polo | Persian Rice With Mung Beans

This Persian Rice and Mung Beans is a super healthy and delicious cuisine to cook and it has different types. It can be cooked with meat or without it. There is a type made with carrots in it, another type is served with tilapia fillets or chicken, all prepared in few simple steps.
Mung Beans are legumes packed with healthy nutrients. This Persian Polo is filled with the nutritious beans. This food, like Ash Jo is a fulfilling choice of meal for vegetarians.
Mash Polo | Persian Rice With Mung Beans
Ingredients
- 1 unit Mung beans
- 3 units Rice
- 1 Big onion
- 3 tbsp Fresh or dried dill
- Oil as much as required
- Salt, pepper, cinnamon, turmeric as much as required
- 3 tbsp Brewed saffron
- ½ cup Raisins
Instructions
- Soak the mung beans in water the night before. It helps them cook better. Then put them into the water and cook for 30 minutes. Do not overcook the mung beans.
- Wash the rice and soak it for 2 hours. Add some salt to the water too.
- Wash the onions, peel and chop them. Fry the onions with salt and turmeric until they turn golden brown. If you prefer, add the raisins and cinnamon and fry them a bit.
- Pick a pot and pour water in it. Boil the water and strain the rice. You can read the instructions in strained rice recipe.
- Mix the strained rice, dill and cooked mung beans.
- Grease the bottom of the pot and cover its surface with potato round slices or bread pieces.
- Put the mixture of rice, mung beans, dill and other optional added ingredients into the pot and let them steam for 30 minutes.
- Pick a very little amount of the rice and add some brewed saffron to it and mix it.
- Use saffron rice, Piaz Dagh and raisins for a garnish. Your delicious polo mash is ready. Bon Appétit.
Mash polo and ground meat
Ingredients
- 250 grams Ground meat
- Garlic powder as much as required
- 1 unit Mung beans
- 3 units Rice
- 1 Big onion
- 3 tbsp Fresh or dried dill
- Oil as much as required
- Salt, pepper, cinnamon, turmeric as much as required
- 3 tbsp Brewed saffron
- ½ cup Raisins optional
Instructions
- Fry the ground meat with the onions on low heat and spread them carefully to prevent it from adhering together and making big particles.
- When the meat started changing color, add the spices and additives to flavor the meat and remove the unpleasant smell.
- Cook mung beans as mentioned above, also strain the rice. Then mix all the ingredients and steam the complex. The dish is ready to be served. Enjoy your meal.
Mash polo with chicken
Cook the chicken with onion, tomato paste and preferred additives. If you like, you can fry them then. Prepare Mash Polo as mentioned above and steam the mixture. Shred the chicken flesh and add it to your rice. Have fun with your cuisine.
Mash Polo with fish
Ingredients
- 300 grams Tilapia fillet
- 125 milliliters Milk
- 1 teaspoon Grated lime skin
- Salt and pepper as much as required
- 135 grams Mung beans
- 2 tbsp Saffron
- Oil as much as required
- 3 units Rice
- 50 grams Melted butter
- Piaz Dagh for garnishing your Polo
Instructions
- Mix milk, grated lime skin, salt and pepper together as a marinade. Marinate the tilapia fillets in it and refrigerate for 1 hour. Then fry the tasteful tilapia fillets and put aside. Make you Mash Polo and serve up with fillets beside.
- You can also cook your Polo with carrots. Just remember to fry the grated carrots with onions before adding them to the steaming mixture.
