Khoresh Kadoo | Persian Zucchini Stew Recipe
A very delicious and easy to make dish is going to make you cheerful! Khoresh Kadoo. This Persian stew is a very popular and tasty dish and is made of zucchinis. The stew is very similar to Khoresh Bademjan.
This traditional Persian dish is super healthy and highly nutritious. Zucchinis are rich in iron, potassium and beta carotene. This dish can reduce the blood pressure and blood cholesterol level.

Khoresh Kadoo | Persian Zucchini Stew Recipe
Ingredients
- 4 zucchini
- 4 tomato
- 400 grams lamb
- 2 onion
- 2 cloves garlic
- 2 tbsp tomato paste
- oil as much as required
- 2 tbsp fresh lemon juice
- salt as much as required
- turmeric as much as required
- black pepper as much as required
Instructions
- Wash onion and garlic and peel them. Grate the garlic cloves and dice the onion into small pieces.
- Pick a suitable pot, grease the bottom of the pot and put it on the flame of the gas burner. Let it become hot and add the onions and garlic and stir fry them. Then add turmeric and black pepper.
- Wash the meat and make it ready. Chop the meat into cubed pieces and add the cubed meat to the garlic and onion and stir fry them. Let the color of the meat cubes change and then add two tablespoon of tomato paste to the meat. it enhances the color and also removes the unpleasant smell of the meat.
- Add three units of boiling water to the pot and reduce the heat. Let the meat cook gradually.
- Wash the zucchinis and peel them. Cut them into two pieces. Pick a pan and grease it with oil and put it on the flame of the gas burner. Let the oil become heated and then roast both sides of the zucchinis in the frying pan. When they turn golden it is ok to remove the pan from the flame. Because frying the zucchinis more than enough will make them less healthy.
- When you are sure the meat is well cooked, add the zucchinis to the pot. Then wash the tomatoes and cut them into two pieces and add them to the stew. Also add the additives and spices to the stew and let it simmer for almost an hour. Meanwhile the extra water will vaporize and the stew becomes juicy and greasy.
- In remaining 20 minutes taste the stew and add any additive you think may enhance the flavor, also add the lemon juice or some ghooreh ghooreh (sour unripe grapes) to the stew and leave it.
- Your Khoresh Kadoo is ready. Serve it with Persian kateh or saffron polo and Shirazi salad or yogurt. The best dish ever is made by you, have fun!
Helping notes
If you do not like red meat, you can replace it with poultry like chicken pieces and in this case you need 500 – 700 grams of the alternate meat. follow the instructions just as mentioned above.
If you are vegetarian, as we mentioned, you can remove meat and make the stew without it.
In some regions people use split chickpeas in the stew. If you like to do so, soak 150 to 200 grams split chickpeas the night before and add it the time you add meat. That way, the stew becomes very much similar to Gheime Bedemjoon.
