Kabab Bakhtiari Recipe

Kabab Bakhtiari is indeed one of the most delicious and popular types of Kebab, cooked differently in different areas. This kebab is actually a combination of roasted chicken and mutton. If you have never tried this mouthwatering kebab with its smoky taste, it is strongly recommended!

Ingredients
  

  • 300 chicken fillet
  • 300 sheep fillet
  • 1 onion
  • 1 bell pepper
  • 1 soupspoon lemon juice
  • 1 soupspoon brewed saffron
  • 2 tablespoons oil
  • 50 grams butter
  • Salt and pepper as much as required

Instructions
 

  • Wash and clean and dry the chicken and the mutton. Based on their sizes and amounts, cut them. Then, use a masher to hit and press them just like what you do for Kabab Tabei
  • Prepare the following sauce and dress the mutton with it. The mutton must be left in the sauce for day:
    To prepare the sauce for the sheep fillet, mix the following ingredients: the juice of 1 onion, 2 soupspoons soy sauce, ½ teaspoon pepper and some olive oil.
  • The chicken fillet must also be dressed with the following sauce for some hours:
    To prepare the sauce for the chicken fillet, mix the following ingredients: brewed saffron, the juice of 1 onion, 2 tablespoons olive oil, salt and pepper,
  • About 5 hours before you want to cook the Bakhtiary Kebab, chop an onion and a bell pepper and add them to both the chicken and mutton. Lemon juice must be added to both of them as well, 30 minutes before you want to cook them
  • Now the chicken and the mutton must be put on a spit. At first add two pieces of the mutton, followed by two pieces of chicken. Continue this pattern until the spit weighs about 150 grams.
  • Once again (when the pieces are on a spit) hit and press them using a masher. In order to prepare them for cooking, rob some butter on the pieces of meat and chicken.
  • To roast them on fire, first you need a strong flame. This flame will make the surface crunchy. The spits must be left on the flame long enough for the pieces to cook completely.

  • In the Iranian food culture, all types of kebab like Bonab Kabab can be served with either bread or rice specially Kateh . Other roasted vegetables such as mushroom, potatoes and especially tomatoes are served next to them.

      actually that turns to another kebab, bakhtiari is the mixture of both.

    the saffron I used was much more than what I accepted! I also did not used onion juice but i diced it into pieces.

      because you added saffron to the sliced onions too and that absorbs much of it. firstly add the saffron.

      when you are serving the kebab, grease butter on the kebabs.
