Iranian Gaz Recipe |Classic Persian Nougat

Gaz is one the most famous souvenirs of Isfahan. This nougat is very mouthwatering and the dominant flavor is sweet. Persians usually serve this sweet with tea.

Gaz is a perfect choice for your tea party in the afternoon. If you have schoolers or preschoolers, you can make a great snack time by giving them 2 or 3 Gazes. Gaz is a sweet Persian nougat that is loved by Persians just the same as Baqlava. Let’s see what it is look like and how it is made!

Ingredients
  

  • 300 g Liquid glucose
  • 250 g Sugar
  • 5 Egg white
  • 1 tbsp Rosewater
  • 150 g Pistachio
  • 1 unit Water
  • Flour as much as required

Instructions
 

  • To make a delicious Esfahani GAz, you need to separate the egg whites and put them in a bowl. Use an electric whisk to beat the egg whites with high speed. Keep beating until the egg whites changes shape and turn solid the way you keep the bowl upside down, nothing gets out.

  • Pick a pot. Pour the water into it and then add the sugar. Put the pot on the flame (low preferably) and let the sugar dissolve in it. Then keep stirring until the color of the syrup changes.
  • Now you need to add the liquid glucose to the pot. When you add the liquid glucose, the content might come up. Be careful that you need to stir the content preferably with wooden spoon. Keep stirring till you have a consistent and elastic shape. The heat must be low in this step all along.
  • Pick a bowl and pour cold water into it. Pick 2 spoon of the content and release it into the cold water. If it was breakable, you need to discard the pot from the heat while you still need to stir the content.
  • Add 2 spoonful of the syrup and place it into the egg whites. Then use the electric whisk to whisk it a little more. Then put the bowl content into the syrup and keep whisking. Keep whisking for 10 minutes to have an even content.

  • Put the pot on the stove again and keep stirring until the content becomes solid. Then add the pistachios. To find out if the Gaz is ready, discard the pot and let it cool. Then pick a little amount of the Gaz content and try if it does not stick to the hands. If it is sticky, you need to keep stirring while heating.

  • When the content has cooled, pick a part of it and shape it with your hands. Sprinkle some flour on it and place them in the dish you want to serve it. bon appetit!

Tips to have a real Esfahani GAZ!

  • Be careful while making the Gaz content, it should not become cold. If it happens, the Gaz will not be ideal!
  • If you want to keep the Gazes in a contained, cover the bottom surface with flour, then place the Gazes and then sprinkle some flour on them too. For keeping Gazes longer than one week, keep it in a fridge.
  • For buying liquid glucose, you can go to pastry shopping and pastry stuff making shopping.
  • Some people add dried cranberries to the gaz too.
  • The easiest way to have the best Esfahani Gaz is to buy a ticket to Iran and then travel to Esfahan. Visit the beautiful city and buy the original Gazes.
