Dal Adas | Persian Lentil Stew

Something that always amazes people about cookery is that there is almost a limitless number of ingredients which can be cooked in numerous ways!
Lentils can be used in a variety of dishes and Dal Adas (Lentil Stew) is one of them. Some people might think it's similar to Adasi (Lentils Soup), but the dishes are served and cooked differently.
Servings 4 people

Ingredients
  

  • 2.5 cups red lentils
  • 1 large potato (needs to be diced)
  • 1 large tomato (needs to be grated)
  • ¼ cup tamarind molasses
  • 1 tablespoon tomato paste
  • 1 small onion (needs to be diced)
  • 1 tablespoon minced garlic
  • Salt, pepper and turmeric, as much as required

Instructions
 

  • Like other beans, lentils should also soak in water. so about 12 hours before you want to cook this dish, leave the red lentils in some water. It's a good idea to change the water at least 3 times.
  • After the lentils are soaked, add the lentils, diced potatoes and some fresh water to a pot. Let them cook over a low flame.
  • To prepare the sauce for this dish, chop some onions and stir fry them using some oil in a pot (do not cook them completely.
  • Add some turmeric to the onions and stir fry and mix the ingredients. After a while , add the garlic and stir fry them until they are cooked .
  • Add the tomato paste and the grated tomato. Stir dry and cook them over a low flame. When all the ingredient are cooked, add some salt and red pepper.
  • Finally, to give the sauce a sour-sweet taste, add the tamarind molasses. Let it cook for a short while.
  • When the lentils and the potatoes are cooked, add the sauce to them and mix them with each other.

Topping and Serving Iranian Lentil Stew

Top the stew nicely with some fresh vegetables and lemon slices. You can separately cook some pieces of diced potatoes just for the topping.

The stew can be served both with and without rice.

If you want to serve it with rice, like other stews, prepare some rice and serve them together.

But without the rice, it can be served like soups. With different types of bread, fresh lemon juice and some oilve oil.

You will enjoy it either way.

Tips for cooking Dal Adas

  • In the original recipe chili is the main spice, but you can skip this if you want to.
  • Tamarind can be replaced with fresh lemon juice.
  • You can use mashed potatoes instead of diced potatoes.
